Tuscan Caprese Sandwiches

Super easy to assemble, these toasted sandwiches make a refreshing lunch or tasty appetizer.
1 French baguette, sliced crosswise into 12 slices
2 medium-sized heirloom tomatoes, sliced into ¼ inch pieces
8 oz. fresh mozzarella, sliced into 12 thin pieces
12 pieces of basil (or another large leafy green like chard or romaine)
2 Tbsp Epicurean Butter Tuscan Herb Flavored Butter, softened
salt and pepper, to taste
Preheat oven to 400°F.
Place sliced bread onto baking sheet. Place in oven and lightly toast for 5-6 minutes.
Remove bread from the oven and liberally spread Tuscan Herb Flavored Butter on each piece while the bread is warm. Add salt and pepper to taste.
Assemble sandwiches and serve immediately.
Optional: Add a small grilled chicken breast or baked ham to make it a meal. Consider super-stacking your sandwich by adding one additional piece of mozzarella, basil, tomato, and bread. Instead of toasting in the oven, you could choose to warm the bread on a grill.
