Preheat the oven to 400°F. Poke top of the potato with a fork 10-12 times, drizzle with olive oil, season with salt & pepper, and bake until soft, about 30-60 minutes.
Sauté beef tips in 1 scoop of Garlic Parmesan Flavored Butter. Season with salt and pepper.
Melt the second scoop of butter and pour it over the baked potato, add a handful of cheddar cheese, the beef tips, and top with green onions.
