It's a simple, yet flavorful weeknight dinner. Not only does this recipe call for only a few ingredients, but it doesn't take long to cook either.
1 red and 1 orange bell pepper, julienne sliced
6 asparagus spears, julienne sliced
1 lemon, sliced
4 (6 oz) fillets of firm white fish between ¾ and 1in thick
4 Tbsp Epicurean Butter Lemon Garlic Herb Flavored Butter
Adjust rack to middle position and preheat oven to 400°F.
Grease large piece of parchment paper in half then open and lay flat.
Place vegetables and lemon slices on parchment paper.
Place fish fillets on lemon slices.
Top each fillet with 1 tablespoon Lemon Garlic Herb Flavored Butter.
Fold parchment over fish and make small overlapping pleats to seal the open sides. Create a half-moon shaped packet.
Place on rimmed baking sheet and bake 15-17 minutes until fish is opaque.
Transfer packets to dinner plates and carefully open and serve.
