3 egg yolks
1 tbsp lemon juice
1 tub of Epicurean Butter A1 Steakhouse Butter (melted)
salt to taste
Whisk egg yolks and lemon juice in a heatproof bowl.
Place over simmering water (don’t let the bowl touch it!).
Slowly whisk in the A1 Steakhouse Butter.
Whisk until thick and velvety. Add salt to taste.
Pro tip: Use it on eggs, roasted asparagus, crab cakes, or straight-up dip your toast in it. We’re not judging.
