2 lbs carrots
1 (3.5 oz) tub Epicurean Butter White Truffle Flavored Butter
¼ cup light or dark brown sugar
salt and freshly ground pepper
1 Tbsp chopped parsley, for garnish
1 Tbsp coarse sea salt, for garnish, such as Maldon
Peel carrots and slice into 1-inch coins if large or leave whole if thin.
Place carrots in a large saucepan or Dutch oven and cover with water. Bring to a boil, reduce heat and simmer until just starting to get tender, 8-10 minutes. Drain and return to pan.
Add White Truffle Flavored Butter, brown sugar, and a sprinkle of salt and pepper and cook for 4-5 minutes over medium heat until carrots are glazed and tender.
Place carrots in a serving dish and drizzle with remaining glaze.
Sprinkle with coarse salt and parsley and serve immediately.
