Chop a few vegetables and let Tomato Chipotle Flavored Butter take it from there!
1 lb chicken breasts or tenders, cut into strips
3 (1 oz) packets Epicurean Butter Tomato Chipotle Flavored Butter
1 red pepper, thinly sliced
1 yellow pepper, thinly sliced
1 orange pepper, thinly sliced
1 red onion, halved and cut into wedges
salt & pepper
for serving: corn tortillas, salsa or pico de gallo, sliced avocado, fresh cilantro, sour cream, fresh lime wedges
Melt 2 tablespoons Tomato Chipotle Flavored Butter in a large non-stick skillet. Add chicken and sauté until done.
Remove from skillet and cover to keep warm. Wipe out pan.
Return pan to heat and melt another 2 tablespoons Tomato Chipotle Flavored Butter. Add peppers and onion and cook until tender, about 4-6 minutes.
Add chicken back to pan and another 1-2 tablespoons Tomato Chipotle Flavored Butter and cook until warm throughout.
Spoon into warm corn tortillas and add toppings of choice.
Try it with Chili Lime Flavored Butter instead. Simple adjustments needed:
