Chili peppers and lime liven up an ordinary chicken and rice dinner. Extra flavor doesn't mean extra time in the kitchen - Chili Lime Flavored Butter does all the work in the recipe.
Ingredients
8 boneless, skinless chicken breasts
¼ cup olive oil
¼ cup lime juice
2 tsp cumin, ground
5 tsp salt
2 cups white rice
3 cups water
1 (3.5 oz) Epicurean Butter Chili Lime Flavored Butter
optional: chopped cilantro and lime wedges
Directions
Place chicken breasts, olive oil, lime juice, cumin, and 4 teaspoons of salt in a plastic baggie.
Shake to coat chicken breasts well.
Heat grill on high.
While grill is heating, combine water, Chili Lime Flavored Butter, and remaining salt in a pot. Bring to a boil.
Stir in rice, reduce to simmer, and cover. Rice should be done in about 20 minutes.
While rice is cooking, place chicken on grill, and cook 4-5 minutes on each side.
Divide rice between plates and top with grilled chicken.
Recipe Note
Optional: garnish with chopped cilantro and a lime wedge.
