Pumpkin Spice Granola

This crowd-pleasing recipe combines the flavors of fall with crunchy oats, nuts, and seeds for a true breakfast treat.
¼ cup Epicurean Butter Pumpkin Spice Flavored Butter
½ cup maple syrup
1 tsp vanilla extract
2½ cups old-fashioned oats
1 cup unsweetened flaked coconut
½ cup chopped pecans
½ cup roasted salted pumpkin seeds (pepitas)
3 Tbsp dark brown sugar
½ tsp sea salt
1 cup dried cranberries
Optional: yogurt, for serving
Preheat oven to 300°F. Lightly spray a baking sheet.
Melt Pumpkin Spice Flavored Butter in a saucepan over medium heat or in a small bowl in the microwave. Remove from heat and add maple syrup and vanilla.
In a large bowl combine oats, coconut, pecans, pumpkin seeds, brown sugar, and salt.
Pour butter mixture over dry ingredients and stir until evenly coated.
Bake for 40 minutes, stirring every 10 minutes.
Remove from oven and stir in cranberries. Let cool and crisp on sheet pan.
- Optional: serve with yogurt for a light snack or breakfast.
- Store in a sealed container for up to a week.
