Sweet potatoes are root vegetables that are high in fiber, beta-carotene (an antioxidant), and vitamins A, B, and C. Many eat sweet potatoes over other starchy vegetables because they are lower on the glycemic index, which is a ranking of foods and how they affect blood glucose levels. Baked and Buttered Sweet Potatoes for the Holidays

If there were a set of flavors that spoke to the feeling of Thanksgiving and Christmas, this would be it. When cooking for the holidays, you can go the traditional way with a sweet potato pie or a sweet potato casserole and substitute regular butter with Epicurean Butter. Another option is to keep it simple with a straight-up baked sweet potato finished with Cinnamon & Brown Sugar Flavored Butter, and maybe even a few walnuts or pecans on top for texture.
Cooks Illustrated has a great article discussing the science behind sweet potato baking. For the best baked sweet potato, leave skins on and poke lots of holes in the potato before microwaving for 10 minutes. Then bake at 425 degrees for one hour. Once slightly cooled, cut potatoes in half and top with your butter.
